Description

A healthy and satisfying burger bowl made with roasted sweet potatoes, seasoned ground beef, crisp lettuce, fresh vegetables, pickles, and creamy special sauce.


Ingredients

For the Beef

  • 1 lb lean ground beef
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Sweet Potatoes

  • 4 small sweet potatoes, peeled and diced
  • 1 tablespoon avocado oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Bowls

  • 1 bag shredded lettuce (8 oz)
  • 1 red onion, thinly sliced
  • 1 pint diced tomatoes (10 oz)
  • 1/2 cup diced pickles
  • Special sauce, for serving

Special Sauce

  • 1/3 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Add diced sweet potatoes to a large bowl. Toss with avocado oil, garlic powder, onion powder, salt, and pepper.
  3. Spread the sweet potatoes evenly on a lined baking sheet.
  4. Bake for 30 to 40 minutes, flipping halfway through cooking, until tender and lightly crispy.
  5. Heat a large skillet over medium heat. Add the ground beef and cook until browned, about 8 minutes.
  6. Stir in Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix well.
  7. Prepare the special sauce by mixing mayonnaise, ketchup, mustard, apple cider vinegar, onion powder, salt, and pepper in a small bowl.
  8. Assemble the bowls with shredded lettuce, roasted sweet potatoes, seasoned beef, red onion, tomatoes, and pickles.
  9. Drizzle with special sauce and serve immediately.
