Ingredients
Crumble Base & Topping

2 cups all-purpose flour

1 cup quick oats

½ cup rolled oats

1 cup brown sugar, packed

1 tsp baking powder

½ tsp salt

¾ cup unsalted butter, room temperature
Cherry Filling

3 cups fresh cherries, stems removed and pitted

½ cup granulated sugar
-
2 tbsp cornstarch
-
1 tbsp lemon juice
Instructions

Preheat & Prep
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving overhang for easy lifting. -
Make the Crumble
In a large bowl, whisk flour, quick oats, rolled oats, brown sugar, baking powder, and salt.
Add butter and cut it in using a fork or pastry cutter until the mixture looks like coarse crumbs. -
Press the Base
Firmly press ⅔ of the crumble mixture into the bottom of the prepared pan. Bake for 12 minutes until lightly golden. -
Prepare Cherry Filling
While the base bakes, combine cherries, sugar, cornstarch, and lemon juice. Stir until cherries are evenly coated . -
Assemble
Spread cherry filling evenly over the warm crust. Sprinkle remaining crumble mixture on top. -
Bake
Return to oven and bake for 30–35 minutes, until the top is golden and the filling is bubbly around the edges. -
Cool & Slice
Cool completely (about 1 hour) for clean slices. The filling should be glossy and set .
