Description
Hearty one-pan Southwestern skillet with lean ground beef, sweet potatoes, black beans, warm spices, and melted cheese.
Ingredients
- 1 pound lean ground beef
- 1/2 cup yellow onion, diced
- 1/2 cup red bell pepper, diced
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon oregano
- 1/8 teaspoon red pepper flakes
- 3 cups sweet potatoes, peeled and cubed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup water
- 1 cup shredded cheese, optional
Instructions
Add the ground beef, onion, bell pepper, and garlic to a large skillet over medium heat.
Cook until the beef is browned, breaking it into chunks while cooking.
Drain any excess fat from the skillet.
Add chili powder, cumin, salt, black pepper, garlic powder, oregano, and red pepper flakes.
Stir constantly and cook for 1 minute to toast the spices.
Add sweet potatoes, black beans, and water to the skillet.
Stir well, reduce heat to medium-low, and cover the skillet.
Cook for 15 to 20 minutes until the sweet potatoes are fork tender.
Remove the lid and cook for 2 to 3 minutes to evaporate extra liquid.
Remove from heat, sprinkle cheese over the top, and cover for 5 minutes until melted.
Serve with your favorite toppings such as avocado, cilantro, sour cream, or jalapeños.
