Description
This sourdough hamburger bun recipe makes soft, golden buns with just the right amount of tang. Perfect for burgers, sandwiches, or sliders — made entirely with sourdough starter and no commercial yeast.
Ingredients

150g active sourdough starter (100% hydration)

500g bread flour (or all-purpose with 11%+ protein)

200g whole milk (room temperature)

50g water

50g unsalted butter, softened

25g sugar

1 large egg (room temperature)

10g salt
-
1 egg + 1 tbsp water (for egg wash)

Sesame seeds (optional)

Instructions

Feed your starter 4–6 hours before baking until bubbly and active.

Mix flour, milk, and water. Let rest 30–45 minutes (autolyse).

Add starter, sugar, butter, egg, and salt. Mix until smooth.

Cover and bulk ferment for 4–5 hours, stretch and fold every 30 minutes.

Divide dough into 8 balls, shape and gently flatten.

Proof 1.5–2 hours until visibly puffy.

Preheat oven to 400°F. Brush buns with egg wash. Add sesame seeds.

Bake for 18–20 minutes until golden brown.

Cool completely before slicing or serving.

To enhance sourdough flavor, shape and cold-proof overnight in fridge.

Dairy-free? Swap milk for plant-based milk and butter for oil.
