  • 2 pounds frozen hash brown potatoes
  • 2 cups shredded Cheddar cheese
  • 1 (7 ounce) can green chile peppers (Optional)

  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Directions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with cooking spray.
  2. Heat a large skillet over medium heat. Add the sausage and cook, breaking it apart, until fully cooked and no longer pink, about 5–7 minutes. Drain excess grease and set the sausage aside.
  3. In the same skillet, add the hash browns and cook over medium heat, stirring occasionally, until lightly golden and slightly crisp, about 8 minutes. Remove from heat.
  4. Spread the cooked hash browns evenly in the prepared baking dish. Sprinkle the cooked sausage evenly over the top, followed by the Cheddar cheese and chile peppers.
  5. In a mixing bowl, whisk together the milk, eggs, salt, pepper, onion powder, and garlic powder until well combined. Pour the egg mixture evenly over the casserole.
  6. Bake uncovered for 35–40 minutes, or until the casserole is set, bubbly, and lightly golden on top.
