Description
Moist high-protein banana bread made with cottage cheese, almond flour, ripe bananas, and juicy blueberries.
Ingredients
2 ripe bananas, mashed
3 medium eggs
1/2 cup cottage cheese, blended
2 tbsp maple syrup
1 tsp vanilla extract
2 1/2 cups almond flour
1 tsp baking soda
1 tsp cardamom
1 cup blueberries, plus a few extra for topping
Instructions
Preheat oven to 350°F (175°C). Line and lightly grease a loaf pan.
Mix mashed bananas, eggs, blended cottage cheese, maple syrup, and vanilla extract in a large bowl.
Combine almond flour, baking soda, and cardamom in a separate bowl.
Add dry ingredients to wet ingredients and mix until just combined.
Gently fold in 1 cup blueberries.
Pour batter into the loaf pan and top with extra blueberries.
Bake for 50 minutes, covering with foil after 30 minutes.
Cool in the pan briefly, then transfer to a wire rack and cool completely before slicing.
