13 oz smoked beef sausage, sliced into medallions

6 oz fresh baby bella mushrooms, cleaned and thinly sliced

½ medium red bell pepper, thinly sliced

½ medium yellow bell pepper, thinly sliced

3 large garlic cloves, minced

12 oz gluten-free penne pasta

½ cup canned diced fire-roasted tomatoes

3 ½ cups chicken broth

2 tablespoons no-salt or low-salt Cajun seasoning

7 oz cream cheese, cubed

Salt, to taste

Fresh Italian parsley, finely chopped (optional)

Instructions

Heat a large skillet over medium heat. Add the sliced smoked beef sausage and cook for 3–4 minutes until lightly browned and fragrant.

Stir in mushrooms and bell peppers. Cook for 4–5 minutes, stirring occasionally, until vegetables begin to soften .

Add minced garlic and cook for 30 seconds until fragrant—don’t let it brown.

Pour in chicken broth and fire-roasted tomatoes. Stir well, then add the uncooked penne pasta.

Sprinkle in Cajun seasoning, stir, and bring everything to a gentle boil.

Reduce heat to medium-low, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed .

Add cream cheese cubes and stir until fully melted and the sauce is creamy and glossy.

Taste and season with salt as needed. Finish with parsley and red pepper flakes if you like extra heat .
