Ingredients
-
4 chicken breast halves
-
1/2 tsp kosher salt
-
1/2 tsp black pepper
-
1/4 tsp paprika
-
1/4 cup all-purpose flour (for dredging)
-
2 Tbsp olive oil
-
1 Tbsp butter
-
2 shallots, finely minced (or 1 small yellow onion)
-
2 Tbsp finely minced garlic
-
1 1/3 cups chicken broth or stock
-
1–1 1/3 cups heavy cream
-
1/4 tsp black pepper
-
1/4 tsp dried Italian seasoning
-
1/3 cup freshly grated Parmesan cheese
Instructions
-
Add flour to a shallow dish. Season chicken on both sides with salt, pepper, and paprika. Dredge each piece lightly in flour, shaking off excess.
-
Heat olive oil in a large skillet over medium-high heat. Add butter, then place chicken in the pan without overcrowding.
-
Cook chicken 4–5 minutes per side until golden brown and cooked through. Remove to a plate and set aside.
-
Reduce heat to medium-low. Add a small drizzle of oil if needed, then add shallots. Cook 2–3 minutes until soft and fragrant.
-
Add garlic and cook 30 seconds, stirring constantly.
-
Slowly pour in chicken broth, scraping up browned bits from the pan. Stir in heavy cream until smooth.
-
Simmer 2–4 minutes until sauce thickens slightly. Add pepper, Italian seasoning, and Parmesan cheese.
-
Return chicken to the pan, nestling it into the sauce. Spoon sauce over chicken and simmer 2–3 minutes until glossy and thickened.
