Description

This easy beef and potato casserole is a cozy one-dish family dinner made with ground beef, sliced potatoes, creamy mushroom sauce, and melted cheese. Perfect for busy weeknights, meal prep, or make-ahead dinners with minimal cleanup and big comfort-food flavor.


Ingredients

  • 1 pound lean ground beef

  • 1 (10.5 oz) can condensed cream of mushroom soup

  • ¾ cup milk

  • ½ cup chopped onion

  • Salt and ground black pepper, to taste

  • 3 cups peeled and thinly sliced potatoes

  • 1 cup shredded Cheddar cheese


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  2. Brown the beef in a skillet over medium heat for 6–8 minutes, breaking it up until fully cooked. Drain excess fat.

  3. Add onion to the beef and cook for 2 minutes until softened and fragrant

  4. Mix soup and milk in a bowl until smooth. Season with salt and pepper.

  5. Layer potatoes evenly in the baking dish, then spoon beef mixture on top.

  6. Pour sauce evenly over the casserole. Cover tightly with foil.

  7. Bake for 45 minutes, until potatoes are fork-tender.

  8. Top with cheese, uncover, and bake 10–15 minutes more until melted and bubbly

  9. Rest 5 minutes before serving so layers set nicely.
