Description

Soft, fluffy mini cinnamon roll bites baked in a muffin tin and topped with creamy frosting. Perfect for brunch, holidays, or make-ahead breakfasts. Easy homemade cinnamon rolls everyone will love.


Ingredients

Dough

  • ½ cup (120 g) milk, lukewarm

  • 2 tablespoons water, lukewarm

  • 1½ teaspoons active dry yeast

  • 3 tablespoons unsalted butter, melted (not hot)

  • 1 large egg

  • 2 tablespoons brown sugar

  • 2 tablespoons granulated sugar

  • 1½ cups all-purpose flour

  • ¾ cup bread flour

  • ¼ teaspoon salt

Cinnamon Filling

  • 3 tablespoons unsalted butter, melted

  • 1 tablespoon ground cinnamon

  • 6 tablespoons brown sugar

Cream Cheese Frosting

  • 4 ounces cream cheese, room temperature

  • ¼ cup (55 g) unsalted butter, room temperature

  • 1 cup (115 g) powdered sugar

  • 23 tablespoons milk


Instructions

  1. Activate the yeast:
    In a large bowl, combine lukewarm milk and water. Sprinkle yeast over the top and let sit for 5 minutes until foamy.

  2. Mix wet ingredients:
    Stir in melted butter, egg, brown sugar, and granulated sugar until smooth.

  3. Add dry ingredients:
    In a separate bowl, whisk together all-purpose flour, bread flour, and salt. Add half to the wet mixture and stir. Add remaining flour and knead with a dough hook for about 7 minutes until smooth and slightly tacky.

  4. First rise:
    Transfer dough to a lightly greased bowl, cover tightly, and let rise for 1½ hours until doubled in size .

  5. Shape the dough:
    Turn dough onto a floured surface and cut in half. Roll one half into a 6×22-inch rectangle. Brush with melted butter.

  6. Add filling:
    Mix cinnamon and brown sugar, then sprinkle evenly over buttered dough.

  7. Roll & slice:
    Roll tightly from the long edge and pinch to seal. Cut into 1-inch pieces and place spiral-side up into a greased mini muffin tin. Repeat with remaining dough

  8. Second rise:
    Cover and let rise for 40 minutes while you preheat the oven to 350°F (175°C).

  9. Bake:
    Bake for 15–17 minutes until edges are lightly golden and internal temperature reaches 190°F.

  10. Prepare frosting:
    Beat cream cheese and butter until smooth. Add powdered sugar and milk, adjusting consistency as desired.

  11. Finish & serve:
    Spread or drizzle frosting over warm rolls and enjoy immediately
