Ingredients

6 large hard-cooked eggs

2 tablespoons butter, softened (salted or unsalted)

2 tablespoons mayonnaise

2 teaspoons Dijon mustard

½–1 teaspoon hot sauce (such as Tabasco), to taste

2 teaspoons pickle brine or olive brine (optional)

Salt, to taste

Freshly ground black pepper, to taste

Paprika, for garnish (optional)

Chopped fresh chives, for garnish (optional)
Instructions

Prepare the eggs:
Peel the hard-cooked eggs. Slice each egg in half lengthwise using a sharp knife. Carefully remove the yolks and place them in a medium bowl. -
Mash the yolks:
Add the softened butter to the yolks. Mash well with a fork until the mixture is smooth and fully combined. For extra-creamy filling, beat with a hand mixer for about 30 seconds -
Mix the filling:
Stir in the mayonnaise, Dijon mustard, hot sauce, and pickle or olive brine (if using). Taste and season with salt and freshly ground black pepper. The filling should be smooth, rich, and slightly tangy. -
Fill the egg whites:
Arrange the egg whites on a serving platter. Spoon or pipe the yolk mixture into each egg white, filling generously -
Garnish and serve:
Sprinkle with paprika and finish with chopped chives if desired. Serve immediately or chill until ready to enjoy
