Description

High-protein low-carb tuna cucumber boats made with tuna, boiled eggs, pickles, onion, spicy sauce, and fresh cucumber. Perfect for weight loss, meal prep, or a quick healthy lunch.


Ingredients

Scale
  • 255g drained tuna, about 9 oz
  • 2 boiled eggs, diced
  • 1 jalapeño, finely diced, optional
  • 1/4 cup dill pickles, finely diced
  • 1/2 small red onion, finely diced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons light mayo
  • 1 to 2 tablespoons sriracha or hot sauce
  • Salt and pepper, to taste
  • 1 to 2 large English cucumbers
  • Sesame seeds, for garnish
  • Teriyaki sauce, for garnish
  • Extra sriracha, for garnish

Instructions

  • Add drained tuna to a mixing bowl.
  • Add diced jalapeño, pickles, and red onion.
  • Boil eggs for 7.5 minutes, cool in an ice bath, peel, dice, and add to the bowl.
  • Stir in Dijon mustard, light mayo, sriracha, salt, and pepper.
  • Mash everything with a fork until well combined.
  • Slice cucumbers lengthwise and scoop out the center.
  • Fill cucumber halves with the tuna mixture.
  • Top with sesame seeds, teriyaki sauce, and extra sriracha.
