Description

These Greek yogurt peanut butter protein cups are creamy, crunchy, and no-bake! A healthy high-protein snack or dessert made with simple ingredients and freezer-friendly for meal prep.


Ingredients

Scale
  • 2 cups Greek yogurt (2–5% recommended)

  • ¼ cup smooth peanut butter

  • 1 tablespoon maple syrup

  • ½ cup salted toasted peanuts, chopped

  • ¼ cup dark or milk chocolate, chopped

  • 2 teaspoons coconut oil


Instructions

  1. Mix the base: In a bowl, stir Greek yogurt, peanut butter, and maple syrup until smooth and creamy.

  2. Add crunch: Fold in the chopped toasted peanuts until evenly distributed.

  3. Portion: Spoon the mixture evenly into muffin liners or silicone cups. Smooth the tops.

  4. Melt chocolate: Microwave chocolate and coconut oil in 20-second intervals, stirring until glossy and melted.

  5. Top & chill: Spoon melted chocolate over each cup. Freeze for 1 hour, or until firm.

  6. Serve: Let sit 2–3 minutes before eating for the best texture
