Description

This Greek yogurt berry bark is a healthy frozen snack made with fresh berries and coconut. Easy, no-bake, and perfect for summer desserts or meal prep snacks.


Ingredients

Scale
  • 1 ½ cups plain full-fat Greek yogurt

  • 2 tablespoons maple syrup or honey

  • 1 teaspoon vanilla extract

  • ½ cup fresh strawberries, thinly sliced

  • ½ cup fresh blueberries

  • 23 tablespoons unsweetened coconut flakes


Instructions

  • Line a baking sheet with parchment paper, smoothing it flat so the bark freezes evenly.

  • In a mixing bowl, whisk the Greek yogurt, maple syrup (or honey), and vanilla extract until smooth and creamy.

  • Pour the yogurt mixture onto the prepared baking sheet and spread into an even layer about ¼-inch thick.

  • Scatter sliced strawberries and blueberries evenly over the yogurt.

  • Sprinkle coconut flakes on top, gently pressing them in so they stick.

  • Freeze for 2–3 hours, or until completely firm

  • Once frozen, break into pieces and serve immediately or store for later
