Ingredients

1 pound ground beef

1 (10.75 oz) can cream of mushroom soup

1 (14.5 oz) can diced tomatoes with juice

½ cup long-grain white rice (uncooked)

¾ cup shredded mozzarella cheese

Salt, to taste

Black pepper, to taste
Instructions

Heat a large skillet over medium heat and add the ground beef. Cook for 6–8 minutes, breaking it apart, until fully browned. Season lightly with salt and pepper.

Carefully drain excess grease, leaving just a little for flavor.

Stir in the cream of mushroom soup and diced tomatoes with their juice until well combined.

Add the uncooked rice and mix thoroughly so it’s evenly distributed.

Bring the mixture to a gentle simmer, then cover with a lid. Reduce heat to low and cook for 18–20 minutes, stirring once halfway through.

When the rice is tender and most liquid is absorbed, sprinkle mozzarella cheese evenly on top.

Cover again and cook for 2–3 minutes until the cheese is melted and gooey.
