Description

This family-approved crock pot chicken is creamy, comforting, and incredibly easy. Made with tender chicken breasts, garlic parmesan sauce, sun-dried tomatoes, and fresh basil. A perfect slow cooker dinner for busy weeknights or cozy weekends.

For the Chicken

  • 4 boneless, skinless chicken breasts

  • ½ teaspoon salt

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ¼ teaspoon black pepper

  • 2 tablespoons olive oil

  • 2 tablespoons butter

For the Sauce

  • 1½ cups chicken broth

  • 3 tablespoons cornstarch

  • 1 cup heavy cream

  • 4 cloves garlic, minced

  • 1½ teaspoons Italian seasoning

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon red pepper flakes

  • ½ teaspoon paprika

  • ⅓ cup sun-dried tomatoes, drained and chopped

  • ½ cup freshly grated parmesan cheese

  • 68 fresh basil leaves, chopped


Instructions

  1. Season the chicken on both sides with salt, garlic powder, onion powder, and black pepper.

  2. Heat olive oil and butter in a skillet over medium heat. Sear chicken for 2–3 minutes per side until lightly golden (no need to cook through).

  3. Transfer chicken to the slow cooker in a single layer.

  4. Whisk chicken broth and cornstarch in a bowl until smooth. Pour over the chicken.

  5. Add heavy cream, garlic, Italian seasoning, salt, pepper, red pepper flakes, paprika, and sun-dried tomatoes. Gently stir around the chicken.

  6. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.

  7. Stir in parmesan cheese during the last 20 minutes until the sauce becomes creamy and glossy

  8. Finish with fresh basil, then serve warm over pasta, rice, or mashed potatoes
