These easy Mongolian ground beef noodles are sweet, savory, and better than takeout. Made with rice noodles, garlic, ginger, and a glossy soy-based sauce, this quick dinner recipe is perfect for busy weeknights and meal prep.
Ingredients

10 ounces (284 g) rice noodles

1 pound (454 g) ground beef (80/20)

1 teaspoon fresh ginger, finely minced

4 garlic cloves, finely minced

Green onions, sliced (for garnish)

White sesame seeds (for garnish)
For the Sauce:

½ cup (118 ml) low-sodium soy sauce

2 tablespoons dark soy sauce

½ cup (118 ml) water
-
¼ cup (55 g) brown sugar

3 tablespoons cornstarch
Instructions

Cook the noodles according to package directions until just tender. Drain and set aside.

Mix the sauce in a small bowl: whisk soy sauce, dark soy sauce, water, brown sugar, and cornstarch until smooth and lump-free.

Brown the ground beef in a large skillet over medium-high heat for 6–8 minutes, breaking it into small crumbles until fully cooked.

Add garlic and ginger to the beef and cook for 1–2 minutes until fragrant. Your kitchen should smell amazing

Pour in the sauce, stirring constantly. Cook for 2–3 minutes until the sauce thickens and becomes glossy.

Add cooked noodles to the skillet and toss gently until evenly coated.
