1 ½ pounds boneless, skinless chicken breasts

½ cup low-sodium soy sauce

2 tablespoons rice vinegar

¼ cup cold water

2 tablespoons cornstarch

1 tablespoon sesame seeds

Instructions

Place chicken breasts flat in the slow cooker so they cook evenly.

In a bowl, whisk together garlic, ginger, honey, brown sugar, soy sauce, sesame oil, and rice vinegar until smooth.

Pour the sauce evenly over the chicken.

Cover and cook on HIGH for 3 hours or LOW for 5–6 hours until chicken is tender.

Remove chicken and shred with two forks while it’s warm

Strain the cooking liquid into a saucepan and bring to a gentle simmer over medium-high heat.

Whisk cornstarch and cold water until smooth, then pour into the sauce.

Boil for 1–2 minutes, stirring, until glossy and slightly thickened.
