Ingredients
-
1 (13 oz) pack smoked beef sausage, sliced into coins
-
1 tablespoon chopped garlic
-
1 (14.5 oz) can chicken broth (about 2 cups)
-
½ cup heavy cream
-
1 (10 oz) can Rotel diced tomatoes with green chilies
-
8 ounces dry bowtie pasta
-
2 cups shredded cheddar cheese
-
1 teaspoon Cajun seasoning
Instructions
-
Slice the sausage into even, bite-sized coins and add them directly to the crockpot.
-
Add garlic, chicken broth, heavy cream, Rotel, dry pasta, and Cajun seasoning. Stir gently so the pasta is mostly submerged.
-
Cover and cook on LOW for 2.5–3 hours, stirring once halfway through to prevent sticking.
-
When the pasta is tender and the sauce looks creamy, stir in shredded cheddar cheese.
-
Cover again and cook for 5–10 minutes, just until the cheese melts and the sauce turns glossy and thick
-
Stir well, taste, and adjust seasoning if needed. Serve hot and enjoy
