Ingredients

1 lb boneless, skinless chicken breast or chicken thighs, diced into bite-size pieces

1 cup uncooked long-grain white rice

1 medium zucchini, coarsely grated (about 1½ cups)

For serving (optional but recommended):

Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Season the chicken: In a mixing bowl, toss diced chicken with lemon juice, olive oil, herbs, and all spices until evenly coated.

Assemble the dish: Spread uncooked rice evenly in the baking dish. Sprinkle grated zucchini over the rice.

Add chicken: Arrange the seasoned chicken evenly on top. Pour chicken broth over everything—do not stir.

Cover and bake: Tightly cover with foil and bake for 35 minutes.

Uncover and finish: Remove foil and bake another 10 minutes, until rice is tender and chicken is cooked through. The rice should be fluffy and slightly glossy
