Description

This crispy honey lime chicken avocado salad is bold, fresh, and perfect for an easy weeknight dinner. Juicy glazed chicken, creamy avocado, crunchy romaine, and spicy honey lime flavors come together in one healthy, satisfying salad bowl. Great for meal prep or summer lunches!

Chicken

  • 8 breaded chicken tenders (or 24 chicken nuggets)

  • ¼ cup honey

  • ¼ cup avocado oil (or olive oil)

  • ¼ teaspoon ground ginger

  • ¼ teaspoon garlic powder

  • ¼ teaspoon cayenne powder

  • 2 teaspoons chili powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Vegetables

  • 2 stalks romaine lettuce, chopped

  • ½ red onion, finely diced

  • 1 avocado, diced

  • 2 stalks green onions, sliced

  • ¼ cup fresh cilantro, chopped

  • ½ cup shredded carrots

  • ¼ jalapeño, finely chopped and deseeded

  • Juice from ½ lime

Dressing

  • ⅓ cup cilantro lime dressing (or similar creamy dressing)


Instructions

1- Cook the Chicken

Bake or air fry the breaded chicken tenders according to package directions until golden brown and crispy (about 12–15 minutes). The coating should be crunchy and deep golden.

2- Make the Honey Lime Glaze

In a small saucepan over medium heat, combine honey, avocado oil, ginger, garlic powder, cayenne, chili powder, salt, and pepper. Stir for 2–3 minutes until slightly bubbly and smooth. The sauce should look glossy and slightly thickened.

3- Coat the Chicken

Remove cooked chicken and slice into bite-sized pieces. Toss in the warm honey lime glaze until evenly coated.

4- Prepare the Salad Base

In a large bowl, combine chopped romaine, red onion, green onions, cilantro, carrots, jalapeño, and lime juice. Toss gently.

5- Add Avocado

Fold in diced avocado carefully to keep it chunky and creamy.

6- Assemble

Top the salad with the glazed crispy chicken. Drizzle with cilantro lime dressing just before serving.

Serve immediately while the chicken is still warm and crisp!
