2 cups fresh spinach

Instructions

Season the chicken evenly with garlic salt and black pepper.

Heat a large skillet over medium-high heat and lightly spray with oil. Add the chicken and cook for 5–7 minutes, stirring occasionally, until golden on the outside.

Add minced garlic and sauté for 1 minute, just until fragrant.

Stir in the rice and chicken broth. Bring to a gentle boil.

Cover and cook for 12–15 minutes, until the rice absorbs most of the liquid. Try not to lift the lid.

Pour in the heavy cream and add spinach. Stir gently, cover again, and cook for 5–7 minutes until the spinach wilts and the rice is tender.
