Cottage Cheese Alfredo Creamy Healthy Pasta Sauce

Description

Creamy, high-protein Alfredo sauce made with blended cottage cheese, parmesan, garlic, and milk for a lighter pasta dish.


Ingredients

Scale

1/2 cup milk
1 1/4 cups cottage cheese
1 tablespoon olive oil
2 cloves garlic, minced
1 cup freshly grated parmesan cheese
1/2 teaspoon Italian seasoning
1/2 cup pasta cooking water (as needed)
Kosher salt, to taste
Fresh cracked black pepper, to taste
12 ounces pasta of choice


Instructions

Blend the milk and cottage cheese until completely smooth.
Heat olive oil in a saucepan over medium heat.
Add the garlic and cook for 1 to 2 minutes until fragrant.
Reduce the heat to low.
Pour in the blended cottage cheese mixture.
Add parmesan cheese and Italian seasoning.
Stir gently until the parmesan melts and the sauce is smooth.
Cook the pasta until al dente according to package instructions.
Reserve 1/2 cup of pasta water, then drain the pasta.
Add the pasta to the sauce and toss over low heat.
Add pasta water as needed to loosen the sauce.
Season with salt and black pepper.
Serve immediately.
