Ingredients

4 boneless, skinless chicken breasts (about 6 oz each)

1½ lbs baby potatoes, halved

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup.

Prep the potatoes: Halve baby potatoes and place them in a mixing bowl. Toss with 2 tablespoons olive oil, garlic, oregano, thyme, paprika, salt, and pepper.

Assemble packets: Tear four large sheets of foil. Divide the seasoned potatoes evenly in the center of each foil sheet.

Add chicken: Place one chicken breast on top of each potato pile. Drizzle remaining olive oil over the chicken and sprinkle lightly with extra salt and pepper.

Seal tightly: Fold foil over the ingredients and crimp edges to form sealed packets.

Bake: Place packets on the baking sheet and bake for 28–32 minutes, until chicken reaches 165°F internally and potatoes are fork-tender

Finish & serve: Carefully open packets (watch the steam!), garnish with fresh parsley, and serve with lemon wedges
