Chicken Breast Foil Packets with Potatoes and Herbs

Description

These chicken breast foil packets with potatoes and herbs are juicy, flavorful, and perfect for busy weeknights. Everything cooks together in the oven or on the grill for a healthy, no-mess dinner the whole family will love.


Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)

  • lbs baby potatoes, halved

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 tablespoon fresh parsley, chopped (for garnish)

  • Lemon wedges, for serving (optional)


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil for easy cleanup.

  2. Prep the potatoes: Halve baby potatoes and place them in a mixing bowl. Toss with 2 tablespoons olive oil, garlic, oregano, thyme, paprika, salt, and pepper.

  3. Assemble packets: Tear four large sheets of foil. Divide the seasoned potatoes evenly in the center of each foil sheet.

  4. Add chicken: Place one chicken breast on top of each potato pile. Drizzle remaining olive oil over the chicken and sprinkle lightly with extra salt and pepper.

  5. Seal tightly: Fold foil over the ingredients and crimp edges to form sealed packets.

  6. Bake: Place packets on the baking sheet and bake for 28–32 minutes, until chicken reaches 165°F internally and potatoes are fork-tender

  7. Finish & serve: Carefully open packets (watch the steam!), garnish with fresh parsley, and serve with lemon wedges
