Description

Ingredients

  • 1 pound lean ground beef

  • ½ cup diced yellow onion

  • 2 garlic cloves, minced

  • 2 tablespoons all-purpose flour

  • 1 cup beef broth

  • 1 tablespoon dried minced onion flakes

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon Worcestershire sauce

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 3 cups shredded cheddar cheese, divided

  • 1 cup sour cream

  • 3 cups diced russet potatoes (about 1-inch pieces)

  • 1 cup diced carrots

  • 1 tablespoon dried parsley (optional, for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

  2. Cook the beef in a large skillet over medium heat. Add diced onion and cook for 4–5 minutes until softened. Stir in minced garlic and cook 30 seconds until fragrant

  3. Make the sauce: Sprinkle flour over the beef mixture and stir well. Slowly pour in beef broth, stirring constantly until slightly thickened and smooth.

  4. Season it up: Add minced onion flakes, onion powder, garlic powder, Worcestershire sauce, salt, and pepper. Stir until combined.

  5. Add creaminess: Remove from heat and stir in sour cream and 1½ cups shredded cheddar cheese until melted and creamy

  6. Assemble the casserole: Spread diced potatoes and carrots evenly in the baking dish. Pour the beef mixture over the vegetables and gently stir to coat.

  7. Top with cheese: Sprinkle remaining cheddar cheese evenly over the top 😍

  8. Bake uncovered for 45 minutes, or until potatoes are fork-tender and the top is bubbly and golden.

  9. Garnish and serve: Sprinkle with dried parsley if desired and let rest 5 minutes before serving.
