4 boneless, skinless chicken breasts (pounded to 1-inch thickness or less)

2 tablespoons olive oil

1 teaspoon Italian seasoning

4 slices mozzarella cheese
Tomato Basil Topping

3 Roma tomatoes, diced

Salt and pepper, to taste

2 teaspoons fresh lemon juice

2 tablespoons finely chopped fresh basil
Instructions

Season the chicken. Pat chicken breasts dry. Sprinkle both sides evenly with Italian seasoning, garlic powder, salt, and black pepper.

Heat the skillet. Heat olive oil in a large skillet over medium heat until shimmering.

Cook the chicken. Add chicken and cook for 5–6 minutes per side, until golden brown and cooked through (internal temp 165°F).

Add cheese. Place a slice of mozzarella on each chicken breast. Cover skillet and cook 1–2 minutes until cheese melts .

Prepare topping. While cheese melts, mix diced tomatoes, lemon juice, basil, salt, and pepper in a bowl.

Finish and serve. Spoon tomato basil mixture over chicken just before serving. Sauce should be fresh and juicy, not watery
