Chicken

  • 4 boneless, skinless chicken breasts (pounded to 1-inch thickness or less)

  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning

  • 1 teaspoon garlic powder

  • ½ teaspoon salt

  • ⅛ teaspoon black pepper

  • 4 slices mozzarella cheese

Tomato Basil Topping

  • 3 Roma tomatoes, diced

  • Salt and pepper, to taste

  • 2 teaspoons fresh lemon juice

  • 2 tablespoons finely chopped fresh basil


Instructions

  • Season the chicken. Pat chicken breasts dry. Sprinkle both sides evenly with Italian seasoning, garlic powder, salt, and black pepper.

  • Heat the skillet. Heat olive oil in a large skillet over medium heat until shimmering.

  • Cook the chicken. Add chicken and cook for 5–6 minutes per side, until golden brown and cooked through (internal temp 165°F).

  • Add cheese. Place a slice of mozzarella on each chicken breast. Cover skillet and cook 1–2 minutes until cheese melts .

  • Prepare topping. While cheese melts, mix diced tomatoes, lemon juice, basil, salt, and pepper in a bowl.

  • Finish and serve. Spoon tomato basil mixture over chicken just before serving. Sauce should be fresh and juicy, not watery
