8 oz whipped cream cheese

2 tablespoons honey

¼ cup strawberries, diced (plus more for serving)

12 slices brioche bread (1 loaf)

1 cup milk (dairy or plant-based)

4 large eggs

½ teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon salt

3 tablespoons butter
Instructions

Make the filling: In a medium bowl, mix whipped cream cheese, honey, and diced strawberries until smooth and evenly combined. Set aside.

Prepare the custard: In a large shallow bowl, whisk together milk, eggs, vanilla, cinnamon, and salt until fully blended.

Assemble the toast: Spread the cream cheese mixture evenly over 6 slices of brioche. Top with the remaining 6 slices, pressing gently to seal.

Heat the skillet: Place a non-stick skillet over medium heat and add about ½ tablespoon butter. Let it melt and coat the pan.

Dip & cook: Dip each stuffed brioche sandwich into the custard, coating both sides well. Transfer immediately to the skillet.

Cook until golden: Cook for 3–4 minutes per side until golden brown and crisp. Flip carefully. Repeat with remaining sandwiches, adding more butter as needed.
