  • 2 (9-inch) pie crusts (homemade or store-bought)

  • 7 large Granny Smith apples, peeled, cored, sliced into ½-inch slices

  • ½ cup granulated sugar

  • ½ cup light brown sugar, loosely packed

  • 2 tablespoons all-purpose flour

  • 1 teaspoon ground cinnamon

  • ⅛ teaspoon ground nutmeg

  • 1 tablespoon lemon juice

  • Zest of ½ lemon

  • 1 large egg, lightly beaten (for egg wash)

  • 2 tablespoons sanding sugar (optional, for topping)


Instructions

  • Preheat oven to 425°F (220°C). Place a baking sheet on the middle rack to catch any drips.

  • Prepare the filling: Add apple slices to a large bowl. Sprinkle with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and lemon zest. Toss gently until apples are evenly coated

  • Line the pie dish with one pie crust, gently pressing it into the bottom and sides.

  • Fill the crust with the apple mixture, spreading evenly and slightly mounding in the center.

  • Top with second crust. Seal and crimp edges. Cut 4–5 small slits in the top to vent steam.

  • Brush with egg wash and sprinkle sanding sugar on top for sparkle

  • Bake at 425°F for 20 minutes, then reduce heat to 375°F (190°C) and bake another 30 minutes until golden and bubbly.

  • Cool for at least 2 hours before slicing so the filling sets properly
