Ingredients

2 (9-inch) pie crusts (homemade or store-bought)

7 large Granny Smith apples, peeled, cored, sliced into ½-inch slices

½ cup granulated sugar

½ cup light brown sugar, loosely packed

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

⅛ teaspoon ground nutmeg

1 tablespoon lemon juice

Zest of ½ lemon

1 large egg, lightly beaten (for egg wash)

2 tablespoons sanding sugar (optional, for topping)
Instructions

Preheat oven to 425°F (220°C). Place a baking sheet on the middle rack to catch any drips.

Prepare the filling: Add apple slices to a large bowl. Sprinkle with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and lemon zest. Toss gently until apples are evenly coated

Line the pie dish with one pie crust, gently pressing it into the bottom and sides.

Fill the crust with the apple mixture, spreading evenly and slightly mounding in the center.

Top with second crust. Seal and crimp edges. Cut 4–5 small slits in the top to vent steam.

Brush with egg wash and sprinkle sanding sugar on top for sparkle

Bake at 425°F for 20 minutes, then reduce heat to 375°F (190°C) and bake another 30 minutes until golden and bubbly.
