Description

Soft apple crumble cookies packed with dried apples, gooey caramel, and topped with buttery cinnamon streusel. Easy, bakery-style cookies perfect for fall baking, holidays, or cozy weekends.

Streusel Topping

  • 3 tablespoons light brown sugar

  • 3 tablespoons granulated sugar

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • ¼ cup unsalted butter, melted

  • ¾ cup all-purpose flour

Cookie Dough

  • 3 cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • 1 teaspoon sea salt

  • 1 cup salted butter, softened

  • 1 cup granulated sugar

  • 1 cup packed light brown sugar

  • 2 teaspoons vanilla extract

  • 2 large eggs

  • 1 cup caramel bits or unwrapped caramel squares, chopped

  • 1 cup chopped dried apples


Instructions

  1. Make the streusel: In a small bowl, mix sugars, cinnamon, salt, melted butter, and flour until crumbly. Set aside to firm up slightly.

  2. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  3. Whisk dry ingredients: Combine flour, baking soda, baking powder, and salt in a bowl.

  4. Cream butter & sugars: Beat butter with both sugars for 2–3 minutes until light and fluffy.

  5. Add wet ingredients: Mix in eggs one at a time, then vanilla extract.

  6. Combine: Gradually add dry ingredients, mixing just until incorporated.

  7. Fold in apples & caramel: Gently stir until evenly distributed.

  8. Scoop & top: Scoop dough onto baking sheets, spacing 2 inches apart. Sprinkle generously with streusel.

  9. Bake: 12–14 minutes until edges are set and tops are lightly golden. Centers should look soft.

  10. Cool: Let cookies rest on the pan for 5 minutes before transferring to a rack.
