- 2 medium zucchini
- ½ cup all-purpose flour
- 2 large eggs
- 1 cup Panko breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 2 teaspoons garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Olive oil spray
Instructions
- Trim zucchini ends and cut into ½-inch thick fries.
- Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan and seasonings.
- Coat each zucchini piece in flour, then egg, then breadcrumb mixture.
- Arrange in a single layer in the air fryer basket.
- Spray lightly with oil.
- Air fry at 400°F for 10–12 minutes until crispy and golden.
- Serve immediately.
