Description

Crispy, golden zucchini fries made in the air fryer with a flavorful Parmesan breadcrumb coating. A healthy and easy snack or side dish.


Ingredients

Scale
  • 2 medium zucchini
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup Panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray

Instructions

  • Trim zucchini ends and cut into ½-inch thick fries.
  • Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan and seasonings.
  • Coat each zucchini piece in flour, then egg, then breadcrumb mixture.
  • Arrange in a single layer in the air fryer basket.
  • Spray lightly with oil.
  • Air fry at 400°F for 10–12 minutes until crispy and golden.
  • Serve immediately.
