Description

Juicy, crispy lemon garlic chicken bites cooked quickly in the air fryer for an easy high-protein dinner or meal prep recipe.


Ingredients

  • 1.5 lbs boneless skinless chicken breast, cubed
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon parsley, optional
  • Lemon wedges for serving

Instructions

  1. Cut the chicken breasts into 1-inch bite-sized cubes.
  2. Place the chicken cubes into a medium mixing bowl.
  3. Whisk lemon juice, olive oil, garlic, oregano, thyme, paprika, salt, and black pepper in a separate bowl.
  4. Pour the marinade over the chicken and toss until evenly coated.
  5. Refrigerate the chicken for at least 30 minutes.
  6. Preheat the air fryer to 400°F (200°C).
  7. Arrange the chicken bites in a single layer inside the air fryer basket.
  8. Air fry for 10 to 12 minutes, flipping halfway through cooking.
  9. Check that the chicken reaches an internal temperature of 165°F (74°C).
  10. Remove the chicken from the air fryer and let it rest for 2 minutes.
  11. Garnish with chopped parsley and serve with lemon wedges.
