Description

High protein, low carb cottage cheese flatbread made with just cottage cheese and eggs. Perfect for sandwich wraps, pizza crusts, or healthy meal prep.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • Garlic powder, to taste (optional)
  • Italian seasoning, to taste (optional)
  • Cooking spray or a little oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a 10×15-inch sheet pan with parchment paper.
  3. Lightly spray the parchment paper with cooking spray or rub with a little oil.
  4. Add cottage cheese, eggs, and seasonings to a blender or food processor.
  5. Blend for about 30 seconds until smooth and creamy.
  6. Pour the mixture onto the prepared sheet pan.
  7. Spread into a thin, even layer.
  8. Bake for 25 to 35 minutes until golden brown and fully cooked.
  9. Remove from the oven and let cool for a few minutes.
  10. Use as a sandwich wrap, pizza crust, or garlic bread base.

Notes

  • A 10×15-inch sheet pan works best for a thin wrap texture.
